Grain Restaurant a 200 seat restaurant, café, cocktail bar, lounge with a number of meeting rooms. Located on the first floor of the newly $25 million redevelopment of the Kings Wharf grain silos in Launceston, Tasmania. The restaurant will be a playful and enjoyable experience for customers and staff, using fresh locally sourced produce and wines from Port to Wilderness. 

 We are seeking passionate and driven individual to take on the role of Venue Manager.

As Venue Manager at Silo Hotel PTY LTD, you will be responsible for all aspects of our food service delivery, together with the Head Chef, you will work to develop our dining concepts and cuisine styles for our signature restaurant. You will Responsible for planning, directing, controlling and coordinating all Food & Beverage activities and outlets to ensure the smooth running and profitability of the department. Furthermore, to establish a reputation of excellence and create a known identity for the operation, building up a regular client base.

Key Responsibilities

  • Preparing yearly budgets conjunction with relevant departments
  • Prepare monthly forecasts of business and implements strategies to increase business levels accordingly.
  • Training of all Team Members in the department, complete documents and supports Team Members attending training sessions, both internal and external
  • Takes responsibility for all revenue and expenses and recommends strategies to control costs and maximising revenue
  • Implement strategies to improve guest service standards which meet/exceed the expectations of the target market of the department and which are in line with the operating concept of the individual outlet
  • Ensure operation manuals are in place and updated in the department
  • Ensures correct reconciliation of banking procedures are followed
  • Follows the correct disciplinary procedures and keeps records of Team Members performance and conducts regular performance appraisals of Part or Full Time Team Members
  • Recruitment of restaurant floor and bar staff & key supervisory roles
  • Manage labour costs in line with budget (both hours and dollars)
  • Conduct briefings with all restaurant staff prior to each service conduct ongoing training of all floor and bar staff
  • Ensure that all bookings are managed to maximise numbers of covers per service and give the customers the best possible experience from the first point of contact
  • Work with F&B Manager to implement all marketing activities and promotions as per the marketing plan Highlighting key issues or areas of the business which require additional marketing support to achieve the revenue targets
  • Operational planning for upcoming events and/or marketing activities
  • Weekly/monthly review of KPI’s and recommend initiatives to improve performance

What we need from you

  • 2 years’ experience in similar role in international luxury hotel with high volume food & beverage operation
  • At least one year experience in unique restaurant and senior management level
  • International hotel experience and knowledge and experience across general hotel operations
